Τα μανιτάρια είναι πανάρχαιοι οργανισμοί, αφού βρέθηκαν απολιθώματα που χρονολογούνται στα 400 εκατομμύρια πριν από την εποχή μας. Στην αρχαία Αίγυπτο απεικονίσεις μανιταριών στόλιζαν τους τάφους των Φαραώ. Οι Έλληνες και οι Ρωμαίοι τα θεωρούσαν σαν εκλεκτή τροφή, ισάξια των θεών. Γνωστές ήταν όμως και οι θεραπεύτηκες τους ιδιότητες, αλλά και οι ψυχότροπες και παραισθησιογόνες ιδιότητες κάποιων μανιταριών που σήμερα πιστεύουμε ότι χρησιμοποιούνταν σε τελετές του αρχαίου κόσμου.
Αναζητώντας την καταγωγή των μανιταριών στα βάθη των αιώνων φτάνουμε πολύ παλιά, στα προϊστορικά χρόνια. Τα πρώτα παλαιοντολογικά ίχνη μανιταριών βρέθηκαν πριν από 400 εκατομμύρια χρόνια. Ο Θεόφραστος το 300 π.Χ. στο έργο του «Περί Φυτών Ιστορία» χρησιμοποίησε για πρώτη φορά τη λέξη «ΜΥΚΗΣ» και έδωσε ονόματα σε διάφορα είδη μανιταριών. Τα παραισθησιογόνα μανιτάρια θεωρήθηκαν σαν «μαγικοί» οργανισμοί και η απανταχού παρουσία τους συνδέθηκε με δεισιδαιμονίες μύθους και παραδόσεις, ενώ παράλληλα επηρέασαν βασικές φιλοσοφίες και θρησκείες σε γνωστούς πολιτισμούς της αρχαιότητας (Ελλάδα, Κ. Αμερική, Ινδία). Η τελετουργική χρήση των μανιταριών και παραισθησιογόνων φυτών μας ταξιδεύει βαθιά στην ιστορία, τουλάχιστον επτά χιλιάδες χρόνια πίσω και πιθανόν φτάνει μέχρι την παλαιολιθική εποχή. Αναγνωρίστηκαν όμως σαν εξαιρετική τροφή στα τελευταία χρόνια της αρχαιότητας και έχαιραν μεγάλης εκτίμησης από τους Ρωμαίους.
Η πρώτη γραπτή αναφορά στα μανιτάρια γίνεται από τον Ευριπίδη τον 5Ο αιώνα π.Χ. και αργότερα από τον Πλούταρχο, τον Θεόφραστο και τον Διοσκουρίδη. Σαφή διάκριση μεταξύ εδώδιμων και δηλητηριωδών μανιταριών έκανε πρώτος ο Διοσκουρίδης τον 1ομ.Χ. αιώνα, ο οποίος επεσήμανε πολλές από τις θεραπευτικές τους ιδιότητες. Πίστευε όμως ότι τις δηλητηριώδεις ουσίες τις απορροφούν από το περιβάλλον στο οποίο αναπτύσσονται. Η λανθασμένη αυτή εντύπωση επικράτησε μέχρι τα 1600 και χρειάστηκαν πολλά χρόνια ερευνών για να αποδειχθεί ότι μόνο ορισμένα μανιτάρια έχουν αυτές τις ουσίες και είναι προϊόντα του μεταβολισμού τους. Αντίληψη που ακόμα ακούγεται στο ελληνικά χωριά.
O αρχαίος συγγραφέας Nίκανδρος στα Γεωργικά του γράφει μεταξύ άλλων ποια απ'αυτά είναι θανατηφόρα : "…είναι εχθρικά και βαριά και πνίγουν τον άνθρωπο τα μανιτάρια της ελιάς, της ροδιάς, του πουρναριού, του δέντρου, και μάλιστα τα φουσκωμένα και κολλημένα στο δέντρο. Aν ρίξεις κοπριά βαθιά, σύρριζα στη συκιά και την ποτίζεις ολοένα με τρεχούμενα νερά, θα φυτρώσουν στις ρίζες μανιτάρια που δεν κάνουν κακό. Από αυτά όμως προτίμησε να κόψεις σύρριζα μανιτάρι θρεμμένο, όχι αδύνατο."
Η ανακάλυψη του «ανθρώπου των πάγων» στις Ιταλικές Άλπεις το 1991 έρχεται να καταρρίψει τον μύθο για χρήση των μανιταριών στην προϊστορία ως παραισθησιογόνων μόνο. Ο ηλικίας 5300 ετών απολιθωμένος άντρας ήταν καλά εξοπλισμένος με εργαλεία της εποχής και με μανιτάρια του είδους Πιπτόπορους ο σιμυδοφόρος (Piptoporus betulinus) που απαντώνται μέχρι σήμερα και στα δάση μας και έχουν αιμοστατικές ιδιότητες.
Ο Ολλανδός Christian Person τον 18ο αιώνα έβαλε τις βάσεις για την ταξινόμηση και την επιστημονική τους ονομασία, ενώ ο Σουηδός Elias Fries, την ίδια εποχή χρησιμοποίησε και το μικροσκόπιο για την κατάταξη τους
Ο λαός μας είναι εξοικειωμένος με τα μανιτάρια, όπως δείχνει και το πλήθος τον λαϊκών ονομάτων με τα οποία είναι γνωστά στα χώρια μας. Εξ’ άλλου η λέξη μανιτάρι προέρχεται από τον αμανίτη, όπως ονομαζόταν το μανιτάρι στην αρχαιότητα.
