Η προέλευση της ζάχαρης από το τεύτλο
Το ζαχαροκάλαμο μας παρείχε τη ζάχαρη από τα αρχαία χρόνια ∙ οπότε για ποιο λόγο ήρθε το ζαχαρότευτλο στο προσκήνιο; Η απάντηση περιλαμβάνει έναν συνδυασμό επιστημονικών ανακαλύψεων και ιστορικών γεγονότων που εκτείνονται σε τρεις αιώνες.
Το ζαχαρότευτλο
Οι πρώτες αναφορές στην οικογένεια φυτών που είναι γνωστή ως Βήτα μπορούν να βρεθούν στην ελληνική λογοτεχνία γύρω στο 420 π.Χ. Περιγράφηκαν ως «ευπροσάρμοστα φυτά κήπου» και αναφέρονται ως σκούρες και φωτεινές ποικιλίες. Η καλλιέργεια τεύτλων διαδόθηκε βαθμιαία σε όλη τη Γαλλία και την Ισπανία, συχνά στα μοναστήρια αλλά και στην αγροτική κοινωνία. Μέχρι τον δέκατο πέμπτο αιώνα, το τεύτλο καλλιεργούνταν σε όλη την Ευρώπη.
Αρχικά το τεύτλο καλλιεργούνταν για τα φύλλα του, τα οποία ήταν πιθανώς το σπανάκι ή το σέσκουλο της εποχής τους. Αργότερα, η ρίζα του έγινε δημοφιλές λαχανικό, ειδικά ο κόκκινος τύπος τεύτλου, γνωστός ως παντζάρι. Το 1600, ο Γάλλος γεωπόνος Olivier de Sererres ανέφερε ότι «αυτό το τρόφιμο όταν μαγειρεύεται παράγει έναν χυμό όπως το σιρόπι ζάχαρης». Εκείνη την περίοδο κανένας δεν έδωσε μεγάλη προσοχή σε αυτό που έδινε στις ρίζες τη γλυκύτητά τους.
Η γλυκιά ανακάλυψη

Το 1747 κατέδειξε ότι οι γλυκείς κρύσταλλοι που λαμβάνονται από τον χυμό των τεύτλων ήταν ίδιοι με εκείνους του ζαχαροκάλαμου. Το 1801 το πρώτο εργοστάσιο ζάχαρης χτίστηκε στο Cunern στην Κάτω Σιλεσία.
Ο Ναπολέων δοκιμάζει τη ζάχαρη του τεύτλου
Παρά την ανακάλυψη του Marggraf, το ζαχαροκάλαμο παρέμεινε η κύρια πηγή ζάχαρης στις αρχές του 19ου αιώνα. Χρειάστηκε η παρεμπόδιση των γαλλικών εμπορικών γραμμών κατά τη διάρκεια των ναπολεόντειων πολέμων για να λάβει το ζαχαρότευτλο την απαραίτητη ώθηση.
Μέχρι το 1806, η ζάχαρη από ζαχαροκάλαμο είχε ουσιαστικά εξαφανιστεί από τα ράφια των ευρωπαϊκών καταστημάτων. Το 1811, Γάλλοι επιστήμονες έφεραν στον Ναπολέοντα δύο κώνους ζάχαρης από ζαχαρότευτλο. Ο Ναπολέων εντυπωσιάστηκε τόσο που αποφάσισε νομοθετικά ότι πρέπει να φυτευτούν 32000 εκτάρια με τεύτλα και παρείχε βοήθεια για να δημιουργηθούν τα εργοστάσια.
Μέσα σε μερικά χρόνια υπήρχαν περισσότερα από 40 εργοστάσια ζαχαροτεύτλων, κυρίως στη βόρεια Γαλλία αλλά και στη Γερμανία, την Αυστρία, τη Ρωσία και τη Δανία.
Μόλις διακόπηκε ο αποκλεισμός των ηπειρωτικών λιμανιών, η ζάχαρη από ζαχαροκάλαμο επανεμφανίστηκε και πολλές χώρες σταμάτησαν την επεξεργασία τεύτλων. Σε αντίθεση, η γαλλική κυβέρνηση υποστήριξε την ανάπτυξη τόσο στην επιλογή των ποικιλιών τεύτλων με υψηλότερα επίπεδα ζάχαρης όσο και στη βελτίωση στις τεχνικές εξαγωγής της ζάχαρης. Αυτή η δίπτυχη προσέγγιση εξασφάλισε ότι η ζάχαρη από το τεύτλο έγινε μια βιώσιμη επιλογή.
Παροχή ζάχαρης στην Ευρώπη
Η βιομηχανία τεύτλων έχει παρουσιάσει διάφορες μεταπτώσεις κατά τη διάρκεια των ετών, αλλά σήμερα η Ευρώπη παράγει 120 εκατομμύρια τόνους τεύτλου ετησίως, που χρησιμοποιούνται για να παραχθούν 16 εκατομμύρια τόνοι άσπρης ζάχαρης.
