Cru: ο γαλλικός όρος για το αμπελοτόπι, τμήμα αμπελουργικής ζώνης ή αμπελώνα που δίνει κρασιά ποιότητας με εξαιρετικό χαρακτήρα
Διάρκεια: η περιγραφή του χρόνου που το άρωμα και η γεύση παραμένουν στο στόμα μας αφού καταπιούμε το κρασί. Η μεγάλη διάρκεια είναι σημάδι ποιότητας.
Επίγευση: η αίσθηση που μας απομένει στο στόμα αφού καταπιούμε το κρασί.
Θολό: σημάδι ότι το κρασί εμφανίζει κάποιο πρόβλημα.
Ισορροπημένο: κρασί με αρμονία στις επιμέρους γεύσεις.
Καπνού άρωμα: το βρίσκουμε σε κρασιά που έχουν περάσει από βαρέλι. Οφείλεται στο εσωτερικό «κάψιμο» των βαρελιών, σημαντικότατη διαδικασία κατά την παρασκευή τους.
Καστανές ανταύγειες: σημάδι παλαίωσης, σε κόκκινο κρασί.
Κλειστό:κρασί που παρά την παλαίωσή του δεν παρουσιάζει την αναμενόμενη μείωση της ξινής και της στυφής γεύσης, δεν έχει «μαλακώσει» αρκετά.
Κουρασμένο: κρασί ταλαιπωρημένο από ταξίδι, υψηλές θερμοκρασίες και εν γένει κακές συνθήκες συντήρησης.
Λαμπερό: περιγραφή της όψης που χαρακτηρίζει ένα φρέσκο λευκό κρασί με ικανοποιητική οξύτητα.
Λουλουδιών αρώματα: τα συναντάμε στα φρέσκα κρασιά, κυρίως τα λευκά. Πιο συνηθισμένα είναι των,τριαντάφυλλου, γιασεμιού, ακακίας, λεμονανθών, βιολέτας.
Μαλακό: ερυθρό κρασί που δεν έχει ενοχλητική όξινη και στυφή γεύση.
Μπλε ανταύγειες: σημάδι νεότητας, σ’ ένα ερυθρό κρασί.
Μπουκέτο ή άρωμα παλαίωσης: χρησιμοποιείται για ένα κρασί που έχει ωριμάσει και αποκτήσει αρωματική πολυπλοκότητα.
Μύτη: ένας γενικός όρος που χρησιμοποιείται για να περιγράψει τα αρώματα του κρασιού.
Νεαρό: κρασί που δεν έχει φτάσει ακόμη στην ωριμότητα, στο απόγειο των χαρακτήρων που μπορεί να μας προσφέρει.

Την αντιλαμβανόμαστε από το καφέ χρώμα και τη μυρωδιά σάπιου μήλου. Σε μερικές όμως περιπτώσεις κρασιών, όπως τα sherry, η ελεγχόμενη οξείδωση μπορεί να είναι ευεργετική.
Οξύτητα: η ξινή γεύση του κρασιού, η οποία συντελεί στην φρεσκάδα αλλά και στη… μακροβιότητά του.
Πλούσιο: κρασί που διαθέτει πληθωρική γεύση.
Πράσινες ανταύγειες: αν τις δείτε σε λευκό κρασί σημαίνει ότι είναι νεαρότατο.
Πρώιμο ή κρασί πρώιμης κατανάλωσης (primeur): κρασί που καταναλώνεται πολύ σύντομα, λίγους μήνες, μετά από την οινοποίησή του, π.χ. Beaujolais Nouveau.
Ρωμαλέο:κρασίμε σώμα, με καλοσχηματισμένους και δεμένους μεταξύ τους χαρακτήρες.
Σκληρό ή τανικό: κρασί με έντονη τη στυφή γεύση των τανινών.
Στρογγυλό: κρασί με σώμα και ισορροπημένη γεύση. Καμιά γεύση δεν ξεχωρίζει από την άλλη. Καμιά δεν υστερεί και καμιά δεν υπερέχει.
Σώμα: ο όρος περιγράφει το πως συμπεριφέρεται το κρασί στο στόμα μας. Ένα κρασί με σώμα, είναι πλούσιο σε συστατικά και αφήνει το στόμα μας γεμάτο από γευστικές εντυπώσεις.
Τανίνες: οι ουσίες που περιέχονται στο φλοιό και το κουκούτσι των σταφυλιών και είναι υπεύθυνες για τη στυφή γεύση των κρασιών αλλά και για τον πλούτο του. Με την παλαίωση και την πάροδο του χρόνου «μαλακώνουν», χάνουν δηλαδή την επιθετική τους στυφάδα.
Terroir: ο γαλλικός όρος που περιγράφει το σύνολο των ποιοτικών παραμέτρων ενός αμπελώνα: έδαφος, υπέδαφος, προσανατολισμός, μικροκλίμα, ποικιλίες σταφυλιού, καλλιεργητικές τεχνικές.
Φλούδα κρεμμυδιού: απόχρωση που παρατηρούμε στα ροζέ κρασιά.
