To ελαιόλαδο στη μαγειρική
Το ελαιόλαδο, είναι το καταλληλότερο λάδι για μαγείρεμα, γιατί αντέχει περισσότερο στις υψηλές θερμοκρασίες σε σχέση με τα υπόλοιπα φυτικά έλαια.
Στη μαγειρική / τηγάνισμα, το ελαιόλαδο παραμένει σταθερό λόγω των αντιοξειδωτικών ουσιών του σε υψηλές θερμοκρασίες. Αντέχει περισσότερο στις υψηλές θερμοκρασίες από ό,τι τα σπορέλαια (200 αντί για 170 βαθμούς Κελσίου).
Κατηγορούν το ελαιόλαδο ότι μετά από 2-3 χρήσεις μαυρίζει ελαφρά, δεν είναι ελάττωμα, αλλά απόδειξη της φυσικότητάς του. Το σκούρο χρώμα του ελαιολάδου προέρχεται από το «ψήσιμο» των φυσικών χρωστικών του.
Στα λεγόμενα «λαδερά» φαγητά, όσο λιγότερο και όσο σε πιο χαμηλή θερμοκρασία μαγειρεύεται το λάδι, τόσο αυξάνονται τα οφέλη για την υγεία μας. Θερμοκρασία τηγανίσματος κάτω από 170 βαθμούς Κελσίου με παρθένο ελαιόλαδο, σύντομος χρόνος μαγειρέματος/ τηγανίσματος και αντικατάσταση του λαδιού έπειτα από κάθε τηγάνισμα έχουν ευεργετική επίδραση στις τροφές (π.χ. στα λαχανικά που προετοιμάζονται κατ' αυτόν τον τρόπο, αυξάνεται η περιεκτικότητά τους σε αντιοξειδωτικές ουσίες και σε σκουλένιο).
Στα 10 τηγανίσματα, το ωφέλιμο ελαϊκό οξύ (του ελαιολάδου) μετατρέπεται σε trans λιπαρό και επιφέρει βλάβες στην υγεία, αυξάνοντας την οξείδωση.
Στα σπορέλαια, αντίθετα, τα ίδια πολικά συστατικά, όσα σχηματίζονται μετά από δέκα τηγανίσματα με ελαιόλαδο, σχηματίζονται με το πρώτο κιόλας τηγάνισμα.
Ο καλύτερος και πιο υγιεινός τρόπος μάλιστα να μαγειρέψουμε τα φαγητά μας είναι να προσθέσουμε το λάδι στο τέλος του μαγειρέματος. Με αυτόν τον τρόπο αφενός δεν αλλοιώνονται τα πολύτιμα συστατικά του ελαιολάδου. Η γεύση του φαγητού θα γίνει πιο ελαφριά, αλλά αυτό δεν σημαίνει ότι δεν είναι νόστιμο.
